Better-For-You Banana Blueberry Muffins
- 2 cups Flour
- 1-1/2 teaspoon Baking Soda
- 1 teaspoon Pumpkin Pie Spice (or Half Cinnamon And Half Nutmeg)
- 4 whole Bananas
- 1 cup Blueberries
- 3/4 cups Sugar
- 2 whole Eggs
- 1/2 sticks Butter, Melted
- 1 teaspoon Vanilla
- 1/4 cups Plain Greek Yogurt
- 1 cup Semi-Sweet Chocolate Chips
- In a large bowl combine flour, baking soda, and spices. I like to use pumpkin pie spice because it has hints of lemon and ginger. Make a well in the middle, and set aside.
- Peel the bananas and mash 'em up! Add the blueberries and give the mixture 3 good mashes (very technical term). Move the mixture to a medium mixing bowl. Add the sugar and eggs (be sure to beat them first). Add the melted butter, the vanilla, and the Greek yogurt.
- Add the banana mixture to the flour mixture. Add the chocolate chips and mix.
- Fill each muffin tin with 1/3 cup of batter, and put into the oven at 350u0b0F for 25-30 minutes (or until a knife inserted into the center comes out clean).
