The “More Cake Than Cookie” Cookie Cake
- 2-1/4 cups Unsifted Flour
- 1 Tablespoon Baking Soda
- 1 teaspoon Salt
- 3/4 cups Granulated Sugar
- 3/4 cups Brown Sugar, Packed
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Pumpkin Pie Spice
- 1 cup Butter Or Margarine, Softened
- 1 teaspoon Vanilla Extract
- 2 whole Eggs
- 1/2 cups Warm Water
- 1/2 cups Vegetable Oil
- 2 cups Semi-Sweet Chocolate Chips
- 1 cup Chopped Nuts (optional)
- 1. Preheat oven to 375 degrees F.
- 2. Mix flour, baking soda, salt, sugar, brown sugar, cinnamon, and pumpkin pie spice. Set aside.
- 3. In a separate large bowl, mix butter, vanilla extract, eggs, water, and vegetable oil until smooth.
- 4. Add dry ingredients to the creamed mixture, and beat with an electric mixer on low speed. Add chocolate chips and nuts and beat through until it's nicely homogenized.
- 5. Pour mixture into a pan at least 10" x 10". You don't want it too deep so it keeps the "cookie" quality. I used a medium sized pizza pan.
- 6. Bake at 375 degrees F for about 35 minutes. The edges should be a lovely golden color, and the middle will be a bit soft and springy to touch.
- 7. Enjoy with a big glass of milk!
