Nectarine Blackberry Crumble
- 4 whole Nectarines, Sliced Thin
- 1-1/2 cup Blackberries
- 1 Tablespoon Pumpkin Pie Spice
- 1/4 cups Whole Wheat Flour
- 1/4 cups Quick Cooking Oats
- 1/4 cups Brown Sugar
- 3 Tablespoons Olive Oil
- 3 Tablespoons Flax Meal
- 1/4 cups Chopped Walnuts
- Olive Oil Spray
- Preheat oven to 375 degrees F. In a 9" greased baking dish, mix nectarines and berries with the pumpkin pie spice.
- In a medium bowl, mix flour, oats, brown sugar, olive oil and flax meal. Stir in walnuts.
- Sprinkle crumble mixture over nectarines and berries. Spray the topping lightly with olive oil spray.
- Bake for approximately 30 minutes, or until fruit is soft and topping is brown. Serve warm (or serve it the next day for breakfast!).
