Jumbo Cornburger
- 1 1/2 lb. ground beef
- 2 slightly beaten eggs
- 1 (8 oz.) can tomato sauce
- 3/4 tsp. salt
- dash of pepper
- 1 tsp. Worcestershire sauce
- 1 (12 oz.) can whole kernel corn
- 1/2 c. medium coarse cracker crumbs
- 1 slightly beaten egg
- 1/4 c. diced green pepper
- 1/4 c. chopped onion
- 2 Tbsp. chopped canned pimiento (optional)
- 1/2 tsp. salt
- 1/4 tsp. ground sage
- 1 medium tomato, peeled and cut in wedges
- 2 oz. sharp process American cheese, shredded (1/2 c.)
- Combine first six ingredients and mix thoroughly. Spread half of the mixture in 8 1/4 x 1 3/4-inch round casserole or 8 x 8 x 2-inch baking dish.
- Combine remaining ingredients except tomato and cheese.
- Spoon over meat.
- Cover with remaining meat mixture. Bake at 375u0b0 for 1 hour.
- Last 5 minutes, arrange tomato on top; sprinkle with cheese.
