Ruby-Red Cranberry Compote With Apple And Pear
- 1 cup Water
- 1 cup Granulated Sugar
- 1 Tablespoon Orange Zest
- 2 Tablespoons Fresh Squeezed Orange Juice
- 2 bags Fresh, Whole Cranberries (12 Ounces Each)
- 1 whole Gala Apple (peeled, Cored And Diced Small )
- 1 whole Bosc Pear (peeled, Cored And Diced Small)
- 1/8 teaspoons Pumpkin Pie Spice Or Cinnamon
- 1) In a medium pot over medium heat, add the water and the sugar; bring to simmer.
- 2) Add the orange zest and the orange juice, and then the cranberries, the cubed apple and pear; gently stir to combine.
- 3) Cover the pot and allow to gently simmer for about 8 minutes, until you hear the cranberries begin to 'pop' and begin to crack slightly; then turn off the heat.
- 4) Stir in the pumpkin pie spice (or cinnamon, if substituting), and pour the hot mixture into a glass bowl; allow to completely cool before covering with plastic*. Keep it refrigerated until ready to serve. Enjoy!
- *Mixture will be a bit 'thin' but will thicken as is cools due to the natural pectins.
