Spicy Southwestern Chorizo & Eggs

  1. In a bowl, break the eggs and scramble. Put in the chopped onions, cheese and spices and mix together.
  2. In a skillet, remove the chorizo sausage from the casing and fry on medium high. As the chorizo heats up, it will start to break down and the grease will start lightly covering the bottom of the skillet. I generally help break it up with my spatula.
  3. Once the chorizo is fried up (about 3 to 5 minutes), add the egg mixture into the skillet and quickly mix together. Continue cooking until done.
