Perfect Chocolate Cake
- 1 c. unsweetened cocoa
- 2 c. boiling water
- 2 3/4 c. unbleached flour
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1 c. butter
- 4 eggs
- 1 1/2 tsp. vanilla
- Preheat oven to 350u0b0.
- Butter and flour three 9-inch round cake pans.
- Combine the cocoa with boiling water, stirring until smooth. Cool completely.
- Sift together the dry ingredients.
- In a large bowl, beat together the butter, sugar, eggs and vanilla.
- Add the dry ingredients alternately with the cocoa mixture to the creamed mix.
- Do not over mix.
- Blend just enough to moisten the dry ingredients.
- Pour the batter into the pans.
- Bake for 25 to 30 minutes.
- Cool in pans for 10 minutes and remove and cool completely.
