Red Quinoa Oatmeal Bread
- 2 cups Red Quinoa (cooked)
- 1 cup Oats Flour
- 2 cups Whole Wheat Flour
- 4 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1 teaspoon Salt
- 3 Tablespoons Pumpkin Seeds
- 2-1/2 Tablespoons Olive Oil
- 3 Tablespoons Maple Syrup
- 2 cups Unsweetened Original Flax Milk
- Preheat oven at 400u0b0F. Prepare the loaf pan with cooking spray and dusted.
- In a bowl mix all the dry ingredients. In another bowl, mix all the wet ingredients. Add wet ingredients into the dry ingredients and mix well until well coated (don't over-mix the batter).
- Spoon the batter into the pan and bake it for 50 minutes or until the toothpick comes out clean. Take the bread out of the oven and let it cool completely.
- Cut into slices and serve. This bread can be eaten as a sandwich, with maple syrup/honey drizzled over it, or spread with butter or cheese.
