Super Food Slaw
- FOR THE DRESSING:
- 1/4 cups Greek Yogurt
- 1 whole Lemon, Zest And Juice
- 1 Tablespoon Granulated Sugar
- 1 Tablespoon Poppy Seeds
- 1/4 teaspoons Salt
- 1 Tablespoon Olive Oil
- FOR THE SALAD:
- 5 ounces, weight Mixed Baby Kale Leaves, (I Always Use Earthbound Farm Baby Kale Mix)
- 5 ounces, weight Chicory, Stems Discarded And Leaves Torn Into Bite-size Pieces
- 5 ounces, weight Broccoli Slaw (cabbage And Broccoli)
- 5 whole Brussels Sprouts, Sliced
- 1/4 cups Roasted Pumpkin Seeds
- 1 cup Dried Cranberries
- Place dressing ingredients in a mini food processor. Blend until well combined.
- Place all of the salad ingredients in a large bowl, toss to combine. Drizzle with the poppy seed dressing. Toss to coat.
