Heirloom Tomato Salad With A Creamy Avocado & Basil Dressing
- FOR THE DRESSING:
- 1 whole Avocado, Taken Out Of The Peel And Cut Into Chunks
- 1 clove Garlic, Roughly Chopped
- 7 whole Basil Leaves
- 1/4 teaspoons Salt
- 1 Lemon, Juiced, Or Less To Taste
- 1/2 teaspoons Apple Cider Vinegar
- 1 cup Water
- FOR THE SALAD:
- 5 ounces, weight Spring Mix Lettuce, Or Lettuce Of Your Choice
- 1 pound Heirloom Cherry Tomatoes Or Regular Cherry Tomatoes, Cut In Half
- 1/2 cups Toasted Pumpkin Seeds
- Extra Basil Leaves For Garnish, If Desired
- 1. Combine all dressing ingredients in a blender and blend until smooth, adding water slowly to reach desired consistency.
- 2. Place about 1 cup of lettuce into a bowl and top with cherry tomato halves. Dress with desired amount of dressing and sprinkle with pumpkin seeds and basil leaves, if desired.
- 3. Enjoy!
