Layered Southwestern Salad
- 1/3 c. chopped fresh cilantro
- 1/2 c. lime juice
- 1/2 c. olive oil
- 1/2 c. sour cream
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 (16-oz.) pkg. romaine lettuce, shredded
- 5 plum tomatoes, chopped
- 1 (15-oz.) can black beans, rinsed and drained
- 1 small red onion, chopped
- 1 (8-oz.) pkg. shredded Mexican 4-cheese blend
- 1 (15-oz.) can whole kernel corn with red and green peppers, drained
- 1 (6-oz.) can sliced ripe olives, drained
- 2 c. crushed tortilla chips
- Layer lettuce and next 7 ingredients in a 3-quart glass bowl. Serve immediately with vinaigrette dressing.
- Makes 8-10 servings.
