Winter Spice Muffins
- 2 cups Whole Wheat Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1 teaspoon Ground Ginger
- 1 teaspoon Cinnamon
- 1 teaspoon Mixed Spice
- 1 cup Brown Sugar
- 1 can (15 Oz. Size) Pumpkin
- 1/2 cups Vegetable Oil
- 2 whole Eggs
- 1/4 cups Black Treacle
- 1/4 cups Walnuts, Crumbled
- 1/4 cups Pumpkin Seeds
- 1/4 cups Sultanas
- Preheat your oven to 350u0b0F/170u0b0C and lightly spray 12 muffins cups with cooking spray (the only time I use it!).
- Sift the flour, baking soda, salt and spices gently into a large bowl.
- In another bowl, whisk together all the wet ingredients (sugar, pumpkin, oil, eggs and treacle). Pour wet ingredients into dry ingredients and stir well to combine. Fold in the nuts, seeds and sultanas.
- Spoon into muffin cups and bake for 25-30 minutes or until a toothpick comes out clean.
