Healthy Whole Wheat Waffles With Strawberries And Toasted Almonds
- 1 cup Rolled Oats
- 1 cup Whole Wheat Flour
- 2 Tablespoons Ground Flaxseed
- 4 teaspoons Baking Soda
- 1/2 teaspoons Pumpkin Pie Spice
- 1/2 teaspoons Salt
- 2 Eggs, Separated
- 1-1/2 cup Skim Milk Or Almond Milk
- 1/2 cups Mashed Banana
- 2 Tablespoons Canola Oil
- Toasted Almonds, Berries, And Maple Syrup, For Topping
- Grind rolled oats into a fine powder using a blender or a coffee grinder. In a large bowl, combine ground rolled oats, whole wheat flour, ground flaxseed, baking powder, pumpkin spice, and salt. Blend well with a whisk.
- In another bowl, mix egg yolks, milk, banana, and oil. In a third bowl, beat egg whites for 1-2 minutes until stiff peaks form.
- Mix egg yolk mixture into dry ingredients. Gently fold in beaten egg whites.
- Cook in a waffle iron, according to waffle iron directions. You'll want somewhere between 1/3 - 2/3 cup of batter in each waffle.
- Top with toasted almonds, berries, and maple syrup.
