Healthy Whole Wheat Waffles With Strawberries And Toasted Almonds

  1. Grind rolled oats into a fine powder using a blender or a coffee grinder. In a large bowl, combine ground rolled oats, whole wheat flour, ground flaxseed, baking powder, pumpkin spice, and salt. Blend well with a whisk.
  2. In another bowl, mix egg yolks, milk, banana, and oil. In a third bowl, beat egg whites for 1-2 minutes until stiff peaks form.
  3. Mix egg yolk mixture into dry ingredients. Gently fold in beaten egg whites.
  4. Cook in a waffle iron, according to waffle iron directions. You'll want somewhere between 1/3 - 2/3 cup of batter in each waffle.
  5. Top with toasted almonds, berries, and maple syrup.
