Oatmeal Peanut Butter Muffins
- 3 Overripe Bananas
- 1/2 cups Olive Oil
- 4 Tablespoons Honey, To Taste
- 1 Egg
- 1 teaspoon Baking Soda
- 1 teaspoon Vanilla Essence
- 1 Tablespoon Peanut Butter, Heaped (sugar And Salt Free)
- 1-1/4 cup White Flour
- 1 cup Rolled Oats
- 2 Tablespoons Pumpkin Seeds
- 2 Tablespoons Sunflower Seeds
- 1 teaspoon Mixed Spice
- 1 teaspoon Ginger
- Preheat oven to 180u0b0C (355u0b0F).
- Mash the bananas in a mixing bowl with a fork. Add olive oil and mix. Mix in honey. Add egg, baking soda and vanilla and mix in. Add the peanut butter and mix in with a fork until it is evenly incorporated. Mix in all dry ingredients.
- Spoon directly into a greased nonstick muffin tin, or into paper cases in a muffin tin. Bake for about 30 minutes or until a tester stick comes out clean.
