Healthy Spiced Apple Muffins
- 1/3 cups Melted Coconut Oil
- 1 cup Coconut Milk
- 2 teaspoons White Vinegar
- 1/3 cups Brown Sugar
- 1 whole Egg
- 1 teaspoon Vanilla Extract
- 1-1/2 cup Whole Wheat Flour
- 1 cup All-purpose Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1/2 teaspoons Salt
- 1 teaspoon Pumpkin Pie Spice
- 1-1/2 cup Diced Apple
- FOR THE TOPPING:
- 2 Tablespoons Butter
- 3 Tablespoons White Sugar
- 1/2 teaspoons Pumpkin Pie Spice
- Preheat oven to 350u0b0F. Prep a muffin tin and set aside.
- Add coconut oil to a large glass bowl. Microwave coconut oil until melted. Add milk and microwave again until room temperature. Add vinegar and stir to combine.
- To make the muffins, whisk milk mixture with brown sugar, egg, whole wheat flour, all-purpose flour, baking soda, baking powder, salt and pumpkin pie spice. Fold in apples until just combined. Divide mixture evenly into the 12 muffin tins.
- To make the topping, melt butter and add sugar and pumpkin pie spice. Sprinkle evenly over the batter.
- Bake for 15 minutes, or until a toothpick inserted into the center of the muffins comes out cleanly. Serve immediately or store in an airtight container.
