White Turkey Chili
- 2 Tablespoons Olive Oil
- 2 pounds Ground Turkey Or Ground Chicken
- 1 whole Medium Onion, Chopped
- 4 stalks Celery, Chopped
- 1 whole Yellow Bell Pepper, Chopped
- 1 whole Jalapeno, Seeded And Chopped
- 4 cloves Garlic, Chopped
- 2 cans (4 Oz. Size) Diced Green Chilies
- 2 teaspoons Ground Cumin
- 1 teaspoon Chili Powder Or Fajita Seasoning
- 1 teaspoon Dried Thyme
- 1/2 teaspoons Dried Oregano
- 1/4 teaspoons Ground Cayenne Pepper
- 2 cans Great Northern White Beans 16 Ounce Cans, Drained, Divided Use
- 4 cups Chicken Or Vegetable Broth
- 1 can (16 Oz. Size) Corn, Drained
- Salt And Pepper, to taste
- 3/4 cups Shredded Mozzarella Or White Cheddar Cheese
- Heat olive oil in a large pot over medium heat. Add the turkey and brown it for about 5 minutes. Add onion, celery, yellow pepper, jalapeno, garlic and green chilies. Cook for another 5 minutes or until veggies are tender and meat is cooked through.
- Add all of the spices. Stir and cook for another 1-2 minutes. Add the beans (reserving 1/2 of a can to mash later), broth and corn, and bring to a boil. Cover the pot, reduce heat and simmer for 20 minutes.
- Use a fork to mash the reserved beans into a paste. Add the bean paste into the chili. Simmer the chili uncovered for another 20 minutes or until chili is thick. Make sure to stir frequently.
- Add salt and pepper to taste. Make sure to use lots of fresh ground black pepper!
- Stir in the cheese right before serving.
- Note: For an even thicker chili, simply mash more of the beans prior to adding them. Get your chili on!
