Swiss Cheese Cutlet
- 5 chicken breasts, split, skinned and boned
- 1/2 tsp. salt
- 2 beaten eggs
- 1 c. fine, dry bread crumbs
- 1/2 c. cooking oil
- 3 Tbsp. butter or margarine
- 1/4 c. all-purpose flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 1/2 c. milk
- 1/2 c. dry white wine
- 1 c. (4 oz.) shredded processed Swiss cheese
- avocado slices (optional)
- tomato wedges (optional)
- boneless chicken breasts
- reduced fat margarine (about 2 Tbsp.)
- 1 c. uncooked rice
- 1 pkg. onion soup mix
- 1 can golden mushroom soup
- 2 c. water
- In a deep casserole dish, melt enough margarine to cover the bottom.
- Over that, sprinkle the uncooked rice.
- Then place chicken breasts on top of the rice.
- In a separate bowl, mix together the onion soup mix, golden mushroom soup and water.
- Pour this mixture over the chicken.
- Cover; bake in 350u0b0 oven for 1 hour, then watch for the smiles.
