Cranberry Mint Cocktail
- 5 Tablespoons Cranberry Sauce
- 3 Tablespoons Lemon Juice
- 4 ounces, fluid Gin
- 2-1/2 ounces, fluid Simple Syrup
- 1 sprig Mint Leaves, Bruised
- 1 bottle (750ml Size) Champagne Or Sparkling Wine, Or As Needed For Topping Off Glasses
- 1 whole Lemon, Sliced, For Garnish
- 2 Tablespoons Fresh Cranberries For Garnish
- 1 bunch Fresh Mint For Garnish
- Combine the cranberry sauce, lemon juice, gin and simple syrup in a lidded container or shaker and refrigerate until ready to serve.
- To serve, fill the shaker or lidded container halfway with ice, add the mint leaves, and shake. Pour over ice into sugar-rimmed glasses, filling 1/3 of the way full. Top with champagne or sparkling water, garnish with lemons, cranberries and mint.
- Tip: Pour the champagne slowly over the back of the spoon to minimize bubbles.
