Ham Fritatta
- 4 eggs
- 1/2 c. biscuit baking mix
- 1/2 c. milk
- 1 tsp. salt
- 1 tsp. Worcestershire sauce
- 1/2 tsp. garlic salt
- 1/2 tsp. cayenne red pepper
- 2 medium zucchini, chopped (about 2 c.)
- 2 medium tomatoes, chopped (about 1 1/2 c.)
- 1 small onion, chopped (about 1/4 c.)
- 1 c. cut up cooked ham
- 1 c. shredded Cheddar cheese (about 4 oz.)
- Heat oven to 325u0b0.
- Beat eggs slightly; beat in baking mix, milk, salt, Worcestershire sauce, garlic, salt and red pepper. Layer zucchini, tomatoes, onion and ham in ungreased baking dish, 8 x 8 x 2-inches; pour egg mixture on top.
- Sprinkle with cheese. Bake uncovered until knife inserted 1-inch from edge comes out clean, 40 to 50 minutes.
- Let stand 10 minutes before serving. Makes 6 to 9 servings.
