Carrot Chowder
- 1 pound Hamburger Or Ground Turkey
- 1/2 teaspoons Salt
- 1/2 cups Celery
- 1/2 cups Green Pepper
- 1/2 cups Onion
- 2-1/2 cups Grated Carrots
- 1/2 teaspoons Garlic
- 1/2 teaspoons Black Pepper
- 1/2 teaspoons Marjoram
- 1 teaspoon Sugar
- 4 cups Tomato Or V-8 Juice
- 2 cups Water
- 2 cans Cream Of Celery Soup
- 5 slices Swiss Cheese, Grated
- Brown hamburger or ground turkey. Add salt. Saute chopped celery, green pepper, onion, grated carrots, garlic, pepper, marjoram and sugar together in 2 tablespoons of oil for 10 minutes. Combine hamburger and vegetable mixture, then add tomato juice and water. Bring to a boil; simmer. Thoroughly blend or whisk cream of celery soup, then add to the mixture. Cook for an additional 30 minutes.
- Serve with grated Swiss cheese.
