Banana Muffins
- 2 cups All-purpose Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 6 ounces, fluid Greek Yogurt
- 2 whole Eggs
- 4 Tablespoons Light Butter, Melted
- 1 cup Brown Sugar
- 4 whole Medium-size Ripe Bananas
- 1 teaspoon Vanilla
- Preheat oven to 375u0b0F. Grease a muffin pan and set aside.
- In a large bowl, whisk together the flour, baking powder, baking soda and salt. Make a well in the center and set aside.
- In a separate bowl, stir together the yogurt, eggs, butter, brown sugar, bananas and vanilla. Add wet ingredients into the dry, stirring just until batter comes together.
- Fill each muffin cup almost to the top. Bake for 15 minutes, or until a tester inserted in the middle comes out clean.
- Cool slightly in the pan before moving to wire rack to cool completely.
