Vegetable Quiche
- 1 1/2 c. chopped zucchini
- 2 c. sliced mushrooms
- 1/2 c. chopped onion
- 2 Tbsp. butter or margarine
- 4 eggs, beaten
- 1 c. cottage cheese
- 3 Tbsp. flour
- 1 1/2 c. shredded Colby/Monterey Jack cheese
- 1/4 tsp. baking powder
- 1/4 tsp. dried basil leaves, crushed
- 1/4 tsp. dried chervil leaves, crushed
- 1/8 tsp. white pepper
- Heat oven to 350u0b0.
- Cook and stir zucchini, mushrooms and onion in butter over medium heat until tender.
- Place remaining ingredients in blender or food processor; cover and blend until smooth.
- Stir into vegetable mixture.
- Pour into greased 9-inch quiche or pie plate.
- Bake for 30 minutes, or until knife inserted off center comes out clean.
- Let stand 10 minutes before serving.
