Florida’S Seafood Chowder
- 2 cups Fish Stock (I Get Mine From Seafood Market)
- 2 cups Vegetable Stock
- 1 can (15 Oz. Size) Diced Tomatoes
- 1 teaspoon Old Bay Seasoning
- 3 sprigs Fresh Thyme, Chopped
- 1 teaspoon Black Pepper
- 2 pinches Red Pepper Flakes
- 1 teaspoon Onion Powder
- 8 ounces, weight Sea Scallops
- 8 ounces, weight Peeled And Deveined Pre-Cooked Medium Shrimp
- 8 ounces, weight Fresh Haddock
- Garnish With Oyster Crackers, If Available To You
- In a large Dutch oven or soup pot (with lid) add fish stock, vegetable stock, diced tomatoes and seasonings (Old Bay seasoning through onion powder). Stir well and heat on medium high heat. Cook for 10-12 minutes, stirring often.
- Reduce heat to medium low and add scallops, shrimp, and haddock. Place lid on the pot and cook for 10-12 minutes more. Shut off stove top and let the chowder rest for 5 minutes.
- Serve and enjoy! Garnish with oyster crackers.
