Vanilla Balsamic Strawberry Popsicles
- 1 pound Hulled Ripe Strawberries, Divided
- 2 Tablespoons Unrefined Cane Sugar
- 2 Tablespoons Vanilla Balsamic Vinegar (available At Boston Olive Oil Company)
- Combine 2 cups hulled and halved strawberries, cane sugar, and vinegar in a medium-sized mixing bowl; stir gently to coat. Let sit at room temperature to macerate for 30 minutes.
- Meanwhile, thinly slice remaining strawberries and set aside.
- Pour the macerated strawberry and vinegar mixture into a food processor or blender and process/puree until smooth. Combine the pureed strawberry mixture with the sliced strawberries in a mixing bowl; stir to incorporate.
- Pour mixture into popsicle molds; insert sticks and freeze for at least 8 hours or overnight.
