Sea Salted Limoncello Popsicles
- 1-1/4 cup Water
- 2/3 cups Sugar
- 1 Tablespoon Lemon Zest
- 1/8 teaspoons Sea Salt
- 1 cup Lemon Juice, Freshly Squeezed
- 1/2 cups Limoncello Liqueur
- 1 teaspoon Flaked Sea Salt
- 12 Popsicle Sticks (or Less, Depending On The Size Of Your Popsicles)
- In a large saucepan, combine the water and sugar over low heat. Heat just until the sugar has dissolved. Then remove pan from heat. Sprinkle the freshly grated zest over the top, add the pinch of sea salt, stir and allow to cool to room temperature.
- Once cool, add the lemon juice and the Limoncello. Stir and pour into popsicle molds. Recipe makes 6-8 large popsicles or 10-12 small popsicles. Cover mold(s) with aluminum foil and freeze for 2 hours.
- After 2 hours, make a slit in the foil over each popsicle and place a stick into each mold through the slit. Freeze an additional 6 hours or overnight.
- To remove them from the mold run mold under warm water for 2-3 seconds only. Melting will occur quickly so do not run them under the water for any longer than the 2-3 seconds. Just prior to eating sprinkle with the flaked sea salt and serve.
