Good Chili
- 2 Tbsp. lard or bacon drippings
- 1 large onion, coarsely chopped
- 3 lb. lean ground beef
- 2 medium cloves garlic, finely chopped
- 1 (8 oz.) can tomato sauce
- 1 Tbsp. ground hot red chile peppers (cayenne or Serrano)
- 1 Tbsp. ground mild red chile peppers
- 1/4 c. chili powder
- 2 tsp. ground cumin
- 1 1/2 tsp. salt
- Melt lard or drippings in large pot over medium heat.
- Add onion; cook until translucent.
- Add meat and garlic; cook until meat is brown.
- Add tomato sauce, red chile peppers, chili powder, cumin and salt.
- Stir to coat meat.
- Add water to cover meat. Bring to boil, reduce heat, cover and simmer for 2 to 2 1/4 hours, stirring frequently.
- Add water as needed to prevent liquid from cooking away.
- Serves 8 to 10.
