Good Chili

  1. Melt lard or drippings in large pot over medium heat.
  2. Add onion; cook until translucent.
  3. Add meat and garlic; cook until meat is brown.
  4. Add tomato sauce, red chile peppers, chili powder, cumin and salt.
  5. Stir to coat meat.
  6. Add water to cover meat. Bring to boil, reduce heat, cover and simmer for 2 to 2 1/4 hours, stirring frequently.
  7. Add water as needed to prevent liquid from cooking away.
  8. Serves 8 to 10.
