Berry Mojito Popsicles
- 1/2 cups Sugar
- 1 cup Water
- 2 whole Limes, Zest Only
- 1/2 cups Mint Leaves (or As Desired)
- 2 cups Lime Juice, For 2 Cups You'll Need About 20 Limes
- 1/3 cups Blackberries
- 1/3 cups Blueberries
- 1/3 cups Blackberries
- 1/2 cups Gold Rum
- Note: Cook time above represents approximate freezing time for popsicles to set. This may vary.
- Combine sugar and water in a small pot over medium-high heat. Gently stir the sugar to dissolve and bring the mix to a boil. Turn off heat. Add lime zest and 1/4 cup (or a handful) of mint leaves to the sugar/water mix and let it steep and cool to room temperature. Once cool, pull out the mint leaves (they can get a little icky).
- In a different bowl combine lime juice, berries and another 1/4 cup (or a handful) of mint and muddle it to break down the berries a bit. Add sugar mixture into the berries and stir to combine. Add rum to the mix and combine.
- Pour mixture into popsicle molds (or other containers) and freeze until set.
- Recipe makes roughly 6 popsicles.
