Mango Mojito Popsicles
- 3 cups Fresh Lime Juice (about 20 Small Limes)
- 3 cups Club Soda
- 2 cups Mango Nectar
- 6 whole Limes
- 2 whole Lemons
- 2/3 cups Fresh Mint Leaves
- 3 cups Granulated Sugar
- 1/2 cups Light Rum
- Mix together the lime juice, club soda, and mango nectar in a large pitcher and let it sit while you work on the next step. Peel the limes and lemons and cut them into small wedges. Add to the pitcher along with the mint, sugar, and rum. Mash all the ingredients together with a large wooden spoon. Pour into popsicle molds and freeze for at least 12 hours.
- When ready to enjoy, let the pops sit out for 5 minutes or run them under warm water to release them from the molds/
- Although I didn't think of this until after I did my shopping, I think dicing up a few mangoes and adding them to the mix would have been a great addition!
