Pumpkin Mini-Muffins With Maple Glaze
- FOR THE MUFFINS:
- 1/2 cups Butter, Softened
- 1 cup Granulated Sugar
- 2 whole Eggs
- 1 teaspoon Vanilla Extract
- 1-1/2 cup Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Pumpkin Pie Spice (more Or Less Depending On How Spicy You Want Them)
- 1/2 teaspoons Salt
- 1/2 cups Sour Cream
- 1/2 cups Chopped Pecans
- 1 cup Pureed Pumpkin

- FOR THE GLAZE:
- 2 cups Powdered Sugar
- 2 Tablespoons Milk (more Or Less, To Reach Glaze Consistency)
- 1 Tablespoon Melted Butter
- 1/4 teaspoons To 1/2 Teaspoon Maple Extract/Flavoring (depending On Your Tastes)
- 1 dash Salt (optional)
- Preheat oven to 350 degrees (F). Grease a mini muffin pan.
- In medium bowl combine: butter, sugar, eggs, and vanilla. Add already mixed dry ingredients; then add sour cream, nuts, and pumpkin to the mixture.
- Bake for 12-15 minutes or until done.
- Mix together glaze ingredients until smooth. Adjust to fit your taste. Pour on warm muffins.
