Ugly Pumpkin Cookies Aka “Puglies”
- 1/2 cups Shortening
- 1 cup Sugar
- 1 cup Pumpkin
- 1 teaspoon Vanilla
- 2 cups Flour
- 1/4 teaspoons Salt
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1 teaspoon Cinnamon
- 1-1/2 cup Butterscotch Chips
- Preheat oven to 350 degrees. Slightly grease a cookie sheet.
- Cream shortening and sugar in a mixer until smooth. Add pumpkin and vanilla. Combine dry ingredients and add to the pumpkin mixture. Add chips and mix well.
- Mixture will be sticky, so I recommend using a small scoop onto cookie sheets. Bake 9-11 minutes and cool on sheets 1 minute before removing to racks to cool.
- Note: the shortening in this recipe can easily be replaced with an equal amount of applesauce to cut the fat. They still taste great, but are just as ugly!
