Pumpkin Turkey Chili
- 1 whole Bell Pepper, Yellow, Chopped
- 1 whole Bell Pepper, Red, Chopped
- 1 whole Yellow Onion, Large, Chopped
- 1 head Garlic, Minced
- 1-1/2 cup Celery, Chopped
- 1 pound Turkey, Ground
- 5 Tablespoons New Mexico Chili Powder
- 1-1/2 Tablespoon Cumin, Ground
- 1-1/2 Tablespoon Mexican Oregano
- 2 dashes Kosher Salt Or Sea Salt
- 2 teaspoons Black Pepper
- 2 cans Small Diced Green Chilies
- 1 can Pumpkin, Large Can
- 1 can Black Beans, Drained
- 1 box Fat Free Reduced Sodium Chicken Broth
- In a large chili pot (I use my enameled cast iron pot) place enough olive oil to cover bottom of pan and saute: bell peppers, onion, garlic, and celery Dump veggies into a bowl after sauteing and set aside.
- In same pot add ground turkey and brown. Add chili powder, ground cumin, Mexican oregano, a dash of Kosher or sea salt, and black pepper.
- Dump veggies back into pot.
- Add diced green chiles, pumpkin, black beans, and chicken broth (veggie broth is good too).
- Simmer for 2 hours and then serve.
