Pumpkin Scones – Close To Starbucks
- FOR THE SCONES:
- 4-1/2 cups Flour
- 1/2 cups Brown Sugar
- 4 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 3-1/2 teaspoons Pumpkin Pie Spice (or Make Your Own Combo)
- 1-1/2 teaspoon Ground Cinnamon
- 1/2 teaspoons Salt
- 1 cup Cold Butter, Cut Into Small Cubes
- 2 whole Eggs
- 1-1/4 cup Pumpkin, Canned
- 1/2 cups Milk

- FOR THE WHITE SUGAR GLAZE:
- 1 cup Powdered Sugar, Sifted (add 1-2 Tablespoons More For Thicker Glaze)
- 2 Tablespoons Milk

- FOR THE SPICE GLAZE:
- 2 cups Powdered Sugar, Sifted
- 3 Tablespoons Milk
- 1/4 teaspoons Pumpkin Pie Spice
- 1 pinch Cinnamon
- In a large bowl, combine first 7 ingredients. Cut in the butter with a pastry blender (can also use two knives) until mixture is a coarse crumble.
- In another large bowl, whisk eggs, pumpkin and milk. Stir in dry ingredients just until moistened.
- Turned onto a floured surface and knead 10-15 times. Divide dough in half and form into individual triangles. For mini scones form into rectangles and cut accordingly. (Check Ree's Petite Vanilla Bean Scones for an example). Place an inch apart on a baking sheet.
- Bake at 400F for 12-15 minutes. Cool on wire rack. Cover cooled scones with white glaze, let it dry and then drizzle with spice glaze.
- For White Sugar Glaze, sift powdered sugar in a bowl and stir in milk.
- For Spice Glaze add spices to powdered sugar and stir in milk.
