Pumpkin Snack Cake
- 1 cup All-purpose Flour
- 1 cup Whole Wheat Flour
- 1-1/2 cup Sugar
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 Tablespoon Cinnamon, Ground
- 1/4 teaspoons Salt
- 4 whole Eggs, Beaten
- 1 can Pure Pumpkin (15 Oz)
- 1/2 cups Canola Or Vegetable Oil
- 1/2 cups Unsweetened Applesauce
- Powdered Sugar, For Sprinkling (optional)
- Preheat oven to 350 degrees F.
- Whisk together flours, sugar, baking powder, baking soda, cinnamon and salt in large bowl. Add eggs, pumpkin, oil and applesauce and stir just to combine. Pour into an ungreased 9x13" baking pan and bake for 30 to 35 minutes or until toothpick inserted in the center comes out clean.
- Optional: Dust with powdered sugar once completely cooled.
