Homemade Banana Layer Cake
- 2 c. all-purpose flour
- 1 1/2 c. sugar
- 1 1/2 tsp. baking powder
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1 c. mashed ripe banana
- 1/2 c. buttermilk
- 1/2 c. shortening
- 2 eggs
- 1 tsp. vanilla
- Grease and flour 2 (9 x 1 1/2-inch) round baking pans; set aside.
- In a large mixing bowl, combine flour, sugar, baking powder, baking soda and salt.
- Add banana, buttermilk, shortening, eggs and vanilla.
- Beat with an electric mixer on low speed until combined.
- Beat on medium speed for 3 minutes.
- Pour into prepared pans.
- Bake in a 350u0b0 oven for 30 minutes or until a toothpick inserted near center comes out clean.
- Cool on wire racks 10 minutes.
- Remove from pans.
- Cool completely on racks.
- Serves 12. Frost with Boiled Frosting recipe.
