Pumpkin Chocolate Chip Muffins
- 1-1/2 cup Granulated Sugar
- 1 cup Canned Pumpkin
- 1/2 cups Vegetable Oil
- 1/2 cups Water
- 2 whole Eggs
- 1-2/3 cup All-purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Pumpkin Pie Spice
- 1 teaspoon Ground Cinnamon
- 3/4 teaspoons Salt
- 1 teaspoon Vanilla Extract
- 1-1/2 cup Semi-Sweet Chocolate Chips
- In a large mixing bowl, combine sugar, pumpkin, oil, water, and eggs; beat well. Combine dry ingredients; gradually add to pumpkin mixture and mix well. Stir in chocolate chips.
- Line a muffin tin with paper liners and fill halfway. Bake in a preheated 350-degree oven for 12 to 15 minutes. Insert a toothpick to check for doneness. If it comes out clean, then it is done. Remove to a wire rack and cool.
- This recipe should make 24 muffins.
