Peach Cobbler
- 2-1/2 pounds Frozen Or Ripe Peaches
- 1/4 teaspoons Cloves
- 1/4 teaspoons Ginger
- 1 teaspoon Cinnamon
- 1 Tablespoon Cornstarch
- 1-1/2 cup Sugar, Divided
- 1/2 cups Butter, Softened
- 1 whole Egg
- 1/2 teaspoons Vanilla
- 1 teaspoon Lemon Zest
- 3/4 cups Flour
- 1 pinch Salt
- 1/4 teaspoons Baking Powder
- Preheat oven to 375 degrees (F).
- Peel peaches if fresh. Thaw if frozen. Mix peaches, cloves, ginger, cinnamon, corn starch, 1 cup sugar and 3/4 cup water. Heat on the stove just until warm, and the sugar dissolves. Spread the mixture into a cobbler pan.
- To make the dough, cream butter and remaining 1/2 cup sugar until smooth. Add in beaten egg, vanilla and lemon zest. Mix well. Then add flour, salt, and baking powder. Mix well. Drop by spoonfuls on top of the fruit and bake for 40 minutes or golden brown.
