Pumpkin Pie Squares
- FOR THE CRUST:
- 1 cup Sifted Flour
- 1/2 cups Quick Cooking Oats
- 1/2 cups Firmly Packed Brown Sugar
- 1/2 cups Melted Butter

- FOR THE FILLING:
- 15 ounces, weight Pumpkin
- 13-1/2 ounces, fluid Evaporated Milk
- 2 whole Eggs
- 3/4 cups Granulated Sugar
- 3/4 teaspoons Pumpkin Pie Spice
- 1/2 teaspoons Salt

- FOR THE TOPPING:
- 1/4 cups Chopped Walnuts
- 1/4 cups Firmly Packed Brown Sugar
- 1 Tablespoon Melted Butter
- Crust: Combine flour, oats, brown sugar and the melted butter. Mix until crumbly, then press into a 9x13 ungreased pan. Bake at 350 degrees for 15 minutes.
- Filling: Combine pumpkin, milk, eggs, sugar, pumpkin pie spice and salt; pour into baked crust. Bake at 350 degrees for 20 more minutes.
- Topping: Combine walnuts, brown sugar and melted butter; sprinkle over the pumpkin filling. Return to the oven for another 20 minutes at 350 degrees, or until filling is set.
- Cool in the pan and cut into squares. Serve topped with whipped cream.
