Pumpkin Apple Streusel Muffins
- FOR THE MUFFINS:
- 2-1/2 cups Flour
- 2 cups Sugar
- 1 Tablespoon Pumpkin Pie Spice
- 1 teaspoon Baking Soda
- 2 whole Eggs, Beaten
- 1 can Pumpkin Puree (14 Oz)
- 1/2 cups Vegetable Oil
- 2 cups Apples, Peeled And Chopped

- FOR THE STREUSEL:
- 2 teaspoons Flour
- 1/4 cups Sugar
- 1/2 teaspoons Cinnamon
- 3-1/2 teaspoons Butter
- Preheat oven to 350 degrees (F) and lightly grease muffin tray (this recipe makes 18 standard sized muffins).
- To make the muffins, in a large bowl, sift together flour, sugar, pumpkin pie spice and baking soda. In a separate bowl, mix together eggs, pumpkin and oil. Add pumpkin mixture to flour mixture until moist and fold in apples. Spoon batter into muffin cups.
- In a small bowl, mix together the streusel ingredients, adding butter 1 teaspoon at a time. Spread over muffins before baking.
- Bake in the oven for 25-30 minutes until a toothpick comes out clean.
