Pumpkin Pecan Waffles
- 4 cups Flour
- 2 teaspoons Baking Soda
- 1 Tablespoon Baking Powder
- 1 teaspoon Salt
- 1/2 cups Brown Sugar, Packed
- 1 teaspoon Cinnamon
- 1 teaspoon Pumpkin Pie Spice
- 2 cups Solid Pack Pumpkin
- 1 cup Butter, Melted
- 3 cups Buttermilk
- 6 whole Eggs
- 2 teaspoons Vanilla
- 1/2 cups Chopped Pecans
- In a large bowl, mix together all dry ingredients. Add pumpkin, melted butter, buttermilk, eggs and vanilla. Mix well. Fold in chopped pecans. Pour into preheated waffle iron and close the lid. When steam stops rising from the waffle iron, waffles are done. Serve warm with butter and syrup or a dusting of powdered sugar.
- Quick notes: substitute 2 tablespoons lemon juice mixed into milk if buttermilk is not available. Also makes great pancakes.
