Pumpkin Spice Bars
- FOR THE BARS:
- 1 box Spice Cake Mix (18 Ounce Box)
- 1/2 cups Vegetable Oil
- 4 whole Eggs
- 16 ounces, fluid Canned Or Cooked Pumpkin

- FOR THE ICING:
- 8 ounces, weight Cream Cheese
- 2 teaspoons Vanilla Extract
- 1 teaspoon Cinnamon
- 1 pound Confectioners Sugar
- Preheat oven to 350 degrees (F). Grease a jelly roll pan.
- Blend cake mix, oil, eggs, and pumpkin on low speed until moistened. Then mix at medium speed for about 2 minutes. Pour mixture into pan and bake for about 25 minutes, or until the top is firm to the touch. Cool completely.
- For the icing: beat cream cheese, vanilla and cinnamon at low speed until blended. Add the confectioner's sugar slowly and beat until smooth. Spread icing over cooled cake.
- Serve in two inch bars.
- I think you could also make these in cupcake form or in a 9x13 cake pan, just adjust the bake time accordingly.
