Pumpkin Spice Bars

  1. Preheat oven to 350 degrees (F). Grease a jelly roll pan.
  2. Blend cake mix, oil, eggs, and pumpkin on low speed until moistened. Then mix at medium speed for about 2 minutes. Pour mixture into pan and bake for about 25 minutes, or until the top is firm to the touch. Cool completely.
  3. For the icing: beat cream cheese, vanilla and cinnamon at low speed until blended. Add the confectioner's sugar slowly and beat until smooth. Spread icing over cooled cake.
  4. Serve in two inch bars.
  5. I think you could also make these in cupcake form or in a 9x13 cake pan, just adjust the bake time accordingly.
