Pumpkin Cookies With Maple Frosting

  1. Cookies:
  2. 1. Cream together shortening and sugar, then mix in pumpkin and eggs.
  3. 2. Mix together the dry stuff: flour, baking soda, salt and spices.
  4. 3. Combine the wet and dry ingredients together, stirring cookie dough until mixed.
  5. 4. Drop by big teaspoonfuls onto cookie sheet.
  6. 5. Bake at 350F for 9-10 minutes. Press down on the tops of the cookies with a spatula when they come out of the oven. This will give a nice flat surface for frosting.
  7. 6. Cool completely before frosting. Makes 4 dozen.
  8. Maple Frosting:
  9. Melt butter, sugar, and milk together in the microwave or in saucepan over low heat, until sugar is dissolved. Add flavorings and sugar. Adjust consistency with sugar, as desired, for spreadable frosting that will solidify thick when cool.
