Cheap Cheater Taco Soup
- 1 pound Ground Beef Or Turkey
- 1 package (about 1 Oz. Packet) Taco Seasoning (I Like The Low Sodium)
- 1 can (14.5 Oz. Can) Stewed Tomatoes, Mexican Recipe
- 1 can (8 Oz. Can) Tomato Sauce
- 1 can (3.8 Oz. Can) Sliced Black Olives
- 1 can (15 Oz. Can) Kidney Beans, Undrained
- 1 can (15 Oz. Can) Sweet Corn, Undrained
- Shredded Cheddar Cheese, To Serve
- 1 container (8 Oz. Container) Sour Cream, To Serve
- Tortilla Chips, To Serve
- Brown meat in a 6-8 quart pot and drain off any grease. Pour seasoning and canned ingredients into the pot and stir. Cover and simmer on low for 30 minutes.
- Whip up a batch of your favorite cornbread or some homemade tortillas. Serve soup topped with 1-2 tablespoons of shredded cheddar, a dollop of sour cream and broken up tortilla chips. Sometimes I add some chopped cilantro if I have it laying around the house or a squeeze of fresh lime juice too.
- Also reheats like magic for lunch the next day!
