Jane’S Pumpkin Bars With Maple Cream Cheese Frosting
- 1/3 cups Granulated Sugar
- 1/3 cups Canola Oil
- 3 whole Eggs
- 15 ounces, weight Canned Pumpkin
- 1 box (18.25 Oz. Box) Yellow Cake Mix
- 3 teaspoons Pumpkin Pie Spice
- 12 ounces, weight Cream Cheese, Softened
- 2 sticks Unsalted Butter, Softened
- 2 cups Powdered Sugar
- 1/4 cups Pure Maple Syrup
- Preheat oven to 350 degrees. Grease and flour a 9x13 cake pan or 15x10 jelly roll. In a large bowl, combine sugar, oil, eggs and pumpkin. Beat together on low until combined. Add cake mix and spice and mix on medium high for 2 minutes. Pour into a greased pan and bake for 25-35 minutes or until a cake tester comes out clean. Cool completely.
- Frosting:
- Mix cream cheese and butter together until creamy. Add powdered sugar and maple syrup, whipping on low until moist then whipping on high for a couple minutes. Frost and cut into bars. Store in the refrigerator.
