Easy Coconut Cream Pie(Makes Two 9-Inch Pies)

  1. Combine sugar, cornstarch and salt in large microwave-safe bowl.
  2. Gradually add milk, stirring with whisk.
  3. Microwave on High 15 minutes, stirring ever 5 minutes.
  4. Beat yolks until frothy. Slowly add a little of hot milk mixture to yolks, then add yolk mixture back to bowl containing hot milk mixture.
  5. Add coconut. Microwave on High 4 minutes, stirring ever 2 minutes.
  6. Remove from microwave.
  7. Add margarine and coconut flavoring.
  8. Mix well.
  9. Cool slightly and pour into baked shells.
  10. Top with meringue and sprinkle with flake coconut.
  11. Bake at 425u0b0 for 5 to 7 minutes.
