Easy Coconut Cream Pie(Makes Two 9-Inch Pies)
- 1 c. sugar
- 1/2 c. cornstarch
- 1/2 tsp. salt
- 5 c. milk
- 6 eggs, separated
- 2 Tbsp. margarine
- 1 tsp. coconut extract
- 2/3 c. flake coconut
- Combine sugar, cornstarch and salt in large microwave-safe bowl.
- Gradually add milk, stirring with whisk.
- Microwave on High 15 minutes, stirring ever 5 minutes.
- Beat yolks until frothy. Slowly add a little of hot milk mixture to yolks, then add yolk mixture back to bowl containing hot milk mixture.
- Add coconut. Microwave on High 4 minutes, stirring ever 2 minutes.
- Remove from microwave.
- Add margarine and coconut flavoring.
- Mix well.
- Cool slightly and pour into baked shells.
- Top with meringue and sprinkle with flake coconut.
- Bake at 425u0b0 for 5 to 7 minutes.
