Butter Pecan Bread
- FOR THE BREAD:
- 2-1/4 cups Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1/2 teaspoons Cinnamon
- 1/4 teaspoons Nutmeg
- 1 cup Brown Sugar, Packed
- 1 whole Egg, Beaten
- 1 cup Buttermilk

- FOR THE TOASTED PECANS:
- 1 cup Pecans
- 3 Tablespoons Butter, Melted, Divided
- 1/2 Tablespoons Light Corn Syrup
- 1/2 teaspoons Sugar
- 1/8 teaspoons Cinnamon
- 1 dash Salt
- For the toasted pecans:
- Preheat oven to 250F. Stir together 1 Tablespoon of melted butter, corn syrup, sugar, cinnamon (1/8 teaspoon) and salt.
- Add pecans, and toss to coat. Spread nuts in a single layer in a pan and bake for 1 hour and 15 minutes. Then remove from oven and let cool.
- For the bread:
- Preheat oven to 350F. Sift together flour, baking powder, baking soda, salt, cinnamon (1/2 teaspoon), nutmeg, and brown sugar.
- Combine egg, buttermilk, and the remaining 2 Tablespoons of melted butter, and add to flour mixture. Stir well to combine. Add toasted pecans.
- Put batter into a greased and floured loaf pan.
- Bake 45-50 minutes. A toothpick should come out clean when inserted into the center of the loaf.
