Sour Cream Banana Cake
- 1/4 c. (1/2 stick) butter or margarine
- 1 1/3 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 1 tsp. baking powder
- 1/2 c. chopped nuts
- 2 c. sifted regular all-purpose flour
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1 c. dairy sour cream
- 1 c. mashed bananas (2 medium size)
- In a mixing bowl, cream butter or margarine; gradually add sugar.
- Beat until light and fluffy.
- Beat in eggs, one at a time. Add vanilla.
- Sift together flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream, beginning and ending with dry ingredients.
- Add bananas and nuts, mixing just until blended.
- Pour into pan.
- Bake in preheated 350u0b0 oven 40 to 45 minutes.
- Cool on wire rack and frost with a caramel frosting or sift confectioners sugar over cooled cake.
