Banana Chocolate Chip Muffins
- 2 cups Flour, Divided Use
- 1-1/3 cup Sugar, Divided
- 1-1/2 teaspoon Baking Powder
- 1/4 teaspoons Salt
- 1-1/2 stick Unsalted Butter, Divided
- 2-1/2 whole Overripe Bananas, Mashed
- 1 whole Egg
- 1 teaspoon Vanilla Extract
- 1/4 cups Milk
- 3/4 cups Semi-Sweet Chocolate Chips
- 1/2 teaspoons Ground Cinnamon
- For the muffins:
- Preheat oven to 350u0b0F. Line twelve standard muffin cups with liners or spray with nonstick baking spray.
- Sift and mix 1 1/2 cups of flour, 2/3 cup of sugar, baking powder and salt in large bowl. Melt 1 stick of butter almost all the way.
- In a separate bowl, mix mashed bananas, egg, softened butter, vanilla and milk. Stir banana mixture into dry ingredients just until blended (do not overmix). Stir in chocolate chips.
- For the streusel topping:
- Just barely soften the remaining 1/2 stick of butter. Mix the 2/3 cup of sugar, 1/2 cup of flour and cinnamon with the butter until the mixture is pea size.
- Pour muffin batter into prepared muffin pan, filling the cups 3/4 full. Spoon topping onto muffins. Bake for 25-30 minutes at 350F. Cool and serve warm or at room temperature.
