Pumpkin Bars, Low Fat But Very Delish
- FOR THE BARS:
- 4 whole Eggs
- 1 cup Brown Sugar
- 2/3 cups Sugar
- 1/4 cups Vegetable Oil
- 3/4 cups Water
- 1 can Pumpkin (15 Oz.)
- 1 teaspoon Vanilla Extract
- 1 cup Whole Wheat Flour
- 1 cup Flour (we Use Unbleached)
- 3 Tablespoons Nonfat Dry Milk Powder
- 2 teaspoons Ground Cinnamon
- 1/2 teaspoons Ground Cloves (optional)
- 1 teaspoon Sea Salt (or Table Salt)
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda

- FOR THE FROSTING:
- 6 ounces, weight Cream Cheese
- 3 cups Powdered Sugar
- 2 Tablespoons Butter, Softened
- 1 teaspoon Vanilla Extract
- Milk To Dilute
- Preheat oven to 350F. Grease a 15x11x1 pan. Mix eggs, brown sugar, sugar, oil, water, pumpkin, vanilla. Add whole wheat flour, unbleached flour, dry milk powder*, spices, salt, baking powder, and baking soda. Mix until smooth. Spread evenly in prepared pan. Bake 20 to 25 minutes. Remove from the oven and COMPLETELY COOL right in the pan, before adding the frosting (if bars are not completely cooled, frosting will slightly warm up and then melt/slide).
- *I use dry milk in most of my baking, but you can omit the water and dry milk powder, and use 3/4 cup of milk instead.
- Cream Cheese Frosting: mix frosting ingredients on low speed until smooth; then beat on high to fluff, for 30 seconds. Place frosting in dollops on surface of bars; spread CAREFULLY.
