Chocolate Chip Pumpkin Cookies
- 3/4 cups Unsweetened Applesauce
- 1-1/2 cup Sugar
- 1-1/2 cup Pumpkin
- 3 cups White Whole Wheat Flour
- 1-1/2 teaspoon Baking Soda
- 1-1/2 teaspoon Baking Powder
- 1-1/2 teaspoon Cinnamon
- 1-1/2 teaspoon Vanilla
- 1 cup Chocolate Chips
- FOR THE ICING:
- 1-1/4 cup Powdered Sugar, Or As Needed
- 3 Tablespoons Milk (or As Needed)
- Cream together applesauce, sugar and pumpkin. Add flour, soda, and baking powder. Add cinnamon and vanilla. Mix well. Add chocolate chips. Spoon out dough the size of a walnut onto a cookie sheet. Bake at 350u0b0F for 20 minutes.
- While baking, make an icing with powdered sugar and milk. Adjust quantities to reach desired consistency. Drizzle icing on cookies while warm. Makes 4 dozen.
