Shrimp And Rice

  1. Cook shrimp in boiling water until tender (approximately 10 to 15 minutes).
  2. Cook rice and put aside to cool.
  3. Cook omelette.
  4. Put aside to cool.
  5. When cool, cut in strips.
  6. Saute onions, green peppers and celery in oil.
  7. Stir in rice, then the shrimp.
  8. Shake in soy sauce, sprinkle in salt, pepper, garlic powder and any other seasoning you wish to put in.
  9. Fold in the egg omelette, then fold in the scallions (spring onions, cut in small pieces but uncooked). Let the heat steam them.
  10. Leave covered for about 1 to 2 minutes, then serve.
